Show of hands… who’s really excited about the weather warming up and spending more time outside?! This girl right here is extra excited because warmer weather means a LOT more grilling! I will say, with Spring arriving so has my boys sports games and more school activities so that means I need real fresh and real fast! You can get this Grilled Pork with Pineapple Fried Rice on the table in under 45 minutes and I call that a win!
I had to run out to Walmart the other day to grab some fun goodies for my sons school party and figured I might as well grab some things for dinner too. I was excited to see the NEW Smithfield® Marinated Fresh Pork and thought this would make for one tasty grilled pork dish! I know you may be thinking “grilling a roast?”. To that I say YES! We all know that a large roast could take a while to cook up and on busy days thats just not an option but if we cut the roast into smaller pieces and grill it, well thats the answer to “whats for dinner on this busy day”….. delicious Grilled Pork with Pineapple Fried Rice!!
This fresh pork is perfectly seasoned and cooked up in just 8 minutes!!!! It doesn’t get much easier then opening up the package, cutting the marinated pork and popping it onto a hot grill. It turned out not only flavorful but so moist too! I thought a perfect pairing to serve the pork with was a tropical feel kind of side like pineapple fried rice! Can I tell you, this is a perfect flavor combination! The slightly smokey dry rubbed pork and the sweetness of the pineapple is just incredible!

The fried rice is super simple to throw together too. I started by cooking the rice to just short of all the way cooked through and set that aside. In a hot skillet I added oil and scrambled up some eggs. Removed the eggs from the pan and added in a little more oil and sautéed garlic, onion and diced fresh pineapple. Mixed up soy sauce, sesame oil and a little water in a bowl. I then added the rice to the pan, the liquids, the cooked egg and frozen peas & carrots. Cooked everything a couple minutes and done. Slice the grilled pork and serve over the pineapple fried rice and garnish with fresh snipped scallions.
A little bonus for you! Its a good sized roast and really can be turned into multiple meals which I just love!!! Heres what a I made the following day. A warmed corn tortillas in a pan to get a little char on them. Topped with shredded lettuce, shredded red cabbage, sliced pork and salsa. A squeeze of fresh lime juice and a side of sweet potato chips and sinner is on the table in minutes!
NOTE: I used fresh pineapple. I cut the pineapple in half and scooped out the fruit and diced it for the rice. I used the exterior as a bowl for fun. You can also use diced canned pineapple if fresh is not available.
- 1 Smithfield Marinated Homestyle Pork Roast, cut into large chops
- 2 cups cooked rice
- 4 Tbsp light olive oil {divided}
- 4 eggs, lightly beaten
- 3/4- 1 cup soy sauce
- 1 1/2 – 2 tsp sesame oil
- 1/4 cup water
- 3 garlic cloves, rough chop
- 1/2 cup chopped onion
- 1/2 a pineapple, diced
- 1 1/2 cups frozen peas & carrots mix
- scallion for garnish
- Cook the rice to just shy of cooked through, drain and set aside.
- Get your grill good and hot. Cook the pork fro about 5 minutes on the first side and another 3 minutes on the second side. You want pork to be cooked through- if you are not sure you can use a meat thermometer and cook until it reads about 150 degrees. Remove from the grill, onto a plate then cover to allow the meat to rest.
- In a small bowl whisk together the soy sauce, sesame oil and water. Set aside.
- Heat a large skillet over medium heat. Add in 2 Tbsp oil and the eggs. scramble until cooked then remove- you can add them right onto your drained rice.
- Add another 2 Tbsp oil to the pan and add in the garlic, onion and diced pineapple. Cook until softened.
- Stir in the cooked rice, frozen peas & carrots and the liquids. Stir to coat and cook until for 2-3 minutes.
- Slice the pork and serve over the pineapple fried rice. Garnish with snipped scallions.
