We really love taco nights in our house and let me tell you, these Pork Tacos with Sweet & Spicy Peach Salsa were a huge hit! This meal is not only delicious and colorful but it is on the table in 30 minutes! You are going to love this recipe!
I am always looking to come up with new dinner ideas that I can throw together quickly because with soccer, hockey and school there is no time to spend all day in the kitchen. This whole meal comes together easily and 30 minutes thanks to Smithfield® which is a huge win in my books! The flavors are perfection!!!
The other day while at Walmart, I picked up a Smithfield® Marinated Homestyle Pork Roast for my tacos. The flavor is fantastic and ready to go making my life easier! I know you may be thinking how is she making a pork roast in under 30 minutes? Simple fix my friends, I cut the roast into thirds first, sear it on all sides in an oven safe skillet then finish it off in the oven. This method is easy and cuts the cooking time down big time.
To build layers of flavor for these Pork Tacos I made a really simple red cabbage slaw. Thinly sliced cabbage tossed with a quick dressing and this adds flavor, crunch and that gorgeous color. The other element is my sweet & spicy peach salsa! This stuff is SO good!!! Diced fresh peaches, jalapeño, red onion, lime juice, cilantro and a little sauce. How fabulous do these tacos look?! The Smithfield® Marinated Homestyle Pork Roast is so perfectly seasoned, tender and juicy. Another great way to cook up the pork for these tacos is to grill it! We’ve not had the greatest weather the past few days getting just a bit of the effects of Hurricane Jose so I cooked mine inside this time but a good char from the grill would be awesome too- either way, these Pork Tacos with Sweet & Spicy Peach Salsa are a perfect meal for any night of the week!
If you happen to have some leftover pork you can make a killer burrito with some rice and beans for lunch the next day. Or you can toss the pork with chopped lettuce, black beans, tomatoes, peach salsa and a squeeze of fresh lime juice for a simple salad.
- 1 Smithfield® Marinated Homestyle Pork Roast
- —
- about 2 heaping cups thinly sliced red cabbage
- 1 Tbsp light mayo
- 2 tsp apple cider vinegar
- 1 tsp olive oil
- 1 tsp sugar
- salt & pepper
- —
- 2 peaches, small dice
- 1 Tbsp finely diced red onion
- 2 tsp finely diced jalapeno {remove ribs and seeds to lower heat}
- juice of 1 lime
- cilantro salt
- —
- flour tortillas
- lime wedges
- cilantro
- jalapeno rings
- Preheat your oven to 385 degrees.
- Cut the roast into 3 even sized pieces. In a large oven safe skillet, add a drizzle of oil and sear the pork on each side. Once golden all around {a few minutes per side} pop the skillet into the oven. Cook for about 15 minutes or until the temperature reaches about 150 degrees.
- In a bowl whisk together the mayo, apple cider vinegar, olive oil, sugar and a little salt and pepper. Toss with the shredded red cabbage. Set aside.
- In a bowl mix together the peaches, red onion, jalapeño, lime juice, some cilantro leaves and salt to taste. Set aside.
- When the pork is done, allow to rest for 5 minutes then dice.
- Warm the flour tortillas and assemble those awesome tacos!

Oh my goodness this looks mouth wateringly delicious!! Think I could sub the roast for a pork tenderloin? I’m always tempted to get the marinated ones but never sure what to do with it!
