With Spring just around the corner I have been really craving salads lately. I made this Greek Chicken Salad with Lemon Oregano Dressing the other day and WOW! So simple to make but so much incredible flavor.
I’ve made it a point to do more meal prepping and for me that partly means coming up with a lot of different ideas for salads. Its important when eating healthy and prepping ahead that its easy to make and has big flavor and this Greek Chicken Salad with Lemon Oregano Dressing really hits it on the head! Chopped romaine, tomatoes, cucumber, kalamata olives, red onion, feta and super flavorful marinated Greek chicken.
I think a lot of times when people talk about salads all they can think of is being bored with them but let me tell you, this one has a ton of flavor and it starts with a simple Greek inspired marinade. Olive oil, lemon zest, dried oregano, garlic powder, salt and pepper. Toss with diced chicken breasts and allowed to absorb all that flavor for a few hours in the fridge. For this I liked dicing the chicken to get even more of that flavor infused as opposed to leaving it whole.
The ingredients to this Greek Chicken Salad with Lemon Oregano Dressing are really simple but hit on everything from salty olives to crunchy cucumbers, to the sweetness of the tomatoes, the creamy crumbly feta and of course that fantastic juicy chicken! This has easily become a regular in our house! Oh and that Lemon Oregano Dressing is AMAZING!!!! Such a wonderful fresh, bright flavor and so good for so many things.
- romaine lettuce
- diced tomatoes
- sliced cucumber
- thinly sliced red onion
- kalamata olive
- feta cheese
- 4 chicken breasts, diced
- 1/4 cup olive oil
- zest of 1 lemon
- 1 tsp salt
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- black pepper
- —
- For the dressing:
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 1/2 tsp oregano
- 1 tsp salt
- pinch of garlic powder
- pepper
- Mix together the olive oil, lemon zest, salt, oregano, garlic power and pepper. Add in the diced chicken and toss to coat. Refrigerate for at least a few hours.
- In a mason jar mix the ingredients for the dressing and set aside.
- In a heavy skillet, brown the chicken in a few batches until cooked through.
- Serve with the amounts you like… chopped romaine, chicken, tomato, cucumber, red onion, feta, olives and the dressing.
