I just love a meal that can work for any time of day and this Frittata Ranchera with Black Bean Salad hits it on the head! Ok, maybe you wouldn’t want a bean salad for breakfast but that Frittata is definitely great for breakfast, brunch, lunch or dinner! It really takes little effort, little time and a handful of ingredients to throw together this incredibly delicious Frittata Ranchera with Black Bean Salad.
Hello Friday!!! You guys it is that special time of year where I get to reveal something special I’ve been working on with some of my favorite fellow food bloggers. Its our Winter Edition Freaky Friday Recipe Swap! I have the great honor of sharing a recipe from my assigned blog- Platter Talk! You’ve all heard me say it before, you absolutely eat with your eyes first and I guarantee if you put this on the table, everyone is going to swoon!
Let me talk a moment about the incredibly fabulous guys over at Platter Talk! Dan & Scott are a couple of dads with a whole bunch of hungry sons. They make one beautiful family and create some of the most mouth watering recipes out there! You have got to check out some of my favorite of theres like these Parmesan Sausage Bread Bowls, this Boston Creme Cake and these Instant Pot Pulled Pork Tacos. I have to say though, when I saw this Frittata Ranchera recipe I knew this was the one! So much flavor and so easy to throw together- my kind of meal!
So you may here “frittata” and think oh that sounds fancy but let me tell you- it is SO easy to make!! This Frittata Ranchera with Black Bean Salad packs incredible flavor! You start by sautéing onion, jalapeño and tomatoes in a little olive oil and salt. I mean that right there as a base- you know the meal is going to be GREAT! Once the veggies are fragrant and softened you simply pour in the eggs that are whisked with parsley, salt and pepper. You then go ahead and dollop in some garlic & herb cheese {the guys used goat cheese, I used just Boursin garlic & herb in its place} Thats it- you don’t touch it, you don’t move the eggs around- nothing. Once the eggs are set you pop it under the broiler to brown the top and done!
Dan and Scott served this frittata with black beans. I loved the sound of that and actually had a perfectly ripe avocado {I know- so lucky right? } on hand so I decided to make a simple black bean salad to go along with this incredible dish. The salad is simply a can of beans, some diced tomato, avocado, red onion and a little lime juice and olive oil. Season simply with salt and pepper and thats it. Its a great bright side.
- 6 large eggs plus 2 large egg whites
- 1/4 cup rough chopped parsley
- salt & pepper
- 1 Tbsp olive oil
- 1 small yellow onion, finely chopped
- 1 1/2 cups grape or cherry tomatoes halved
- 1 jalapeno chile (ribs and seeds removed for less heat, if desired)
- 4 oz crumbled goat cheese or garlic & herb cheese
- For the salad:
- 1 can 15 oz black beans, drained and rinsed
- 1 avocado, diced
- a handful of halved tomatoes
- a few pinches of finely diced red onion
- squeeze of fresh lime juice
- drizzle olive oil
- fresh chopped parsley
- Heat oven broiler, with rack 4 inches from the heat source.
- In a large bowl, whisk together whole eggs, egg whites, and parsley. Season with 1/2 tsp salt and 1/4 tsp pepper.
- Heat oil in a medium size oven proof skillet, over medium heat.
- Add onion, tomatoes, and jalapeños. Cook, stirring occasionally, until onion has softened, about 6 minutes.
- Add egg mixture.
- Sprinkle evenly with cheese.
- Cover, reduce heat to low, and cook until eggs are almost set, 5 to 7 minutes.
- Uncover skillet and place frittata under broiler. Cook until the top is set and just beginning to brown, 3 to 4 minutes.
- Run a flexible spatula around edge of frittata to loosen from pan, then slide onto a plate.
- For the bean salad- simply mix the beans, avocado, tomato, red onion, lime and olive oil in a bowl Season with salt and pepper to taste and finish with chopped parsley.
