I love Summer- the beach days, the warmth of the sun, the grilling but I really love that we live in a state that gets all the seasons. As soon as that air gets a chill in it I jump into soup mode! This Easy Vegetable Orzo Soup truly couldn’t be any easier and the flavors are fantastic!! Oh and start to finish this is on the table in under 20 minutes!
Today is a really fun day… its our Fall Edition of the Freaky Friday recipe swap! A bunch of my fabulously talented blogger friends and I get assigned a blog to choose a recipe from then create and share with our readers. We don’t find out who we’ve been assigned until today! I was lucky enough to be assigned the incredible Debra from Bowl Me Over! Her recipes are always delicious and this Easy Vegetable Orzo Soup was calling my name- easy, fast and delicious!
Debra is such a sweetheart and Souper Chef!! She and I have something very important in common- you know besides our love of cooking- we are Green Bay Packer Fans! Go Pack Go! Now you see why its always so hard to choose just one recipe- they all sound amazing!!
So why this recipe? For me thats easy- I LOVE soup!! I don’t know why but tend to think of soup as a long simmer instead of a quick and delicious meal I can get on the table in under 20 minutes. Both our boys play ice hockey- the big guy even made the travel team this year which means we are spending a LOT of time at the rink. To me, theres nothing more comforting then warming up with a big bowl of soup. And with this easy recipe I can do that no matter how busy we are.
This Easy Vegetable Orzo Soup starts simply with olive oil, carrots, celery, onion, garlic, Italian seasoning, salt and pepper. Once the veggies are softened you add in plenty of chopped spinach. Stir in uncooked orzo, give everything a good mix then in go the liquids- fire roasted tomatoes {yum!}, broth and water. Bring it all up to a boil then simmer until the orzo is cooked. Thats it!! Everything in one pot, gotta love that!
NOTE: If you are not eating the soup right away leave the orzo out at first. When you reheat the soup go ahead and cook the pasta in there. This will prevent the orzo from overcooking.
- 3 carrots, diced
- 2 stalks celery, diced
- 1 yellow onion, diced
- 8 cups spinach, rough chop
- 1 clove garlic, chopped
- 1 14.5 oz can fire roasted tomatoes
- 1 cup orzo pasta
- 4 cups vegetable or chicken broth
- 3 cups water
- 1 Tbsp olive oil
- 1 tsp italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- Heat a large stockpot over medium heat. When it is good & hot, add the olive oil.
- Add in the carrots, celery, onion and the spices – Italian seasoning, salt, pepper. You can add some red pepper flakes if you’d like some heat.
- Sauté for 4-5 minutes until the vegetables begin to soften. Add in the garlic & sauté for about another minute, until the garlic becomes fragrant.
- Add the soup to the pot.
- Next add the pasta and give everything a good stir. Pour in the tomatoes, stock and water. Increase the heat to high and stir well to combine. Bring to a boil, then reduce the heat to medium and cook until the orzo is cooked through – about 8-9 minutes.
- Continue to stir the soup often. The orzo has a tendency to stick to the bottom of the pan.
- When the orzo is cooked, remove the soup from the heat. Optional: Add a squeeze of fresh lemon juice and about a tablespoon of chopped parsley for bright fresh flavor.
