Lemon Basil Pesto White Bean Dip

I want to hold onto Summer a little longer don’t you? I cannot believe we’re at Labor Day Weekend already. Lets enjoy this weekend with some delicious eats shall we? Today I’m sharing with you my super easy and delicious Lemon Basil Pesto White Bean Dip served with Wholesome Pantry Sweet Potato Tortilla Chips.

Lemon Basil Pesto White Bean Dip

I do all my grocery shopping at my local ShopRite and I am especially loving the expansion of their Wholesome Pantry line! Wholesome Pantry products are free from 110 preservative, additives or colors. There is an incredible selection of products that are delicious and make eating healthier that much easier which I just love! I used their Organic Cannellini Beans, fresh basil pesto, lemon and olive oil to make this simple dip. The Wholesome Pantry Sweet Potato Tortilla Chips are such a great compliment.

Lemon Basil Pesto White Bean Dip

We were invited to a BBQ this weekend and I was asked to do an appetizer. I love making white bean dips {think Italian style hummus} because they come together quickly and you can really customize flavors. I wanted to hold onto all those summer flavors with the bright fresh basil pesto and lemon. Everything gets put right into a food processor and blended up until smooth and creamy. I  was recently given the opportunity to try out a few of the USDA certified organic products from the Wholesome Pantry  line and I knew these tortilla chips would be PERFECT for my Summer snacking dip! Snacking is part of our daily lives, and ShopRite’s Wholesome Pantry line elevates the snacking experience. I was so excited to try the Raw Cashews, Dried Mango Slices, Granola Squares, Fruit & Nut Bar and the chips- especially helpful now that both boys travel hockey season is getting going! We are running all over, all the time and healthy snacks like these are a game changer. Last year we found ourselves grabbing not the most healthy of snacks so I am always thrilled to come across more delicious and healthier options like these.

A little tip for ya… Put together snack sized baggies with a mix of dried fruits, nuts, granola bars cut into pieces! They are so easy and SO GOOD!

Lemon Basil Pesto White Bean Dip

This Lemon Basil Pesto White Bean Dip is such a healthy snack and I highly recommend you give it a try this weekend!  This year I planted a VERY small garden and basil was on that short list. I love being able to run out back and grab fresh basil when I’m making sauce or a caprese salad. Towards the end of summer I like making a big jar full of pesto. I think it adds such a great flavor when paired with the lemon zest and lemon juice. You can grab my Basil Pesto Recipe or purchase some at the store.

Lemon Basil Pesto White Bean Dip

Ingredients
  • 3 cans Organic Wholesome Pantry Cannellini Beans, rinsed and drained
  • 3 Tbsp Basil Pesto
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Approx. 1/4 cup olive oil
  • Salt and pepper to taste
  • Wholesome Pantry Organic Sweet Potato Tortilla Chips
Instructions
  1. Place the beans, pesto, lemon zest and lemon juice in a food processor. Pulse a few times to get it started.
  2. With the machine running, slowly drizzle in the olive oil. You are looking for a smooth a creamy consistency. You MAY need to add a little more or a little less olive oil. If you really love the taste of lemon you can add a little more of that. Once you are at the consistency of hummus, you are done.
  3. Taste and season with salt and pepper to your preference. Serve with Wholesome Pantry Organic Sweet Potato Tortilla Chips.
