I am a lover of cupcakes. If you follow along on LeMoine Family Kitchens Facebook page then you now I have a slight obsession with them and have found the most amazing cupcake shop in Asbury Park, Confections of a Rock$tar! They are just perfection and since I can’t get there every time I am craving a cupcake, I am always trying to bake them at home. I have tried many recipes and and so thankful that I finally found The Best Vanilla Cupcake with Vanilla Buttercream!
I love being in the kitchen, I love cooking and I love baking. Baking however doesn’t always love me and let me tell you there have been many fails when it comes to baking. I decided to go ahead and search one of my favorite blogs; Life, Love & Sugar for the perfect vanilla cupcake recipe and I could not be happier to have found it!
These Vanilla Cupcakes are the perfect texture and flavor and are now and forever my go to! Moist, the perfect amount of crumble, the perfect amount of sweetness; just wonderful! I changed a couple small things from the original recipe like adding a little extra vanilla to the cupcake, using unsalted butter, a pinch of salt and my method of mixing varies a little bit too. The Vanilla Buttercream is a really simple one that I’ve used many times on here. A light and fluffy mixture of butter, powdered sugar, vanilla and heavy whipping cream.
I have to tell you about this pretty fabulous gadget I found that made this cupcake bake a whole lot less messy then my typical baking session. The KPKitchen Pancake Batter Dispenser is ideal for all sorts of foods that use batter as their base. From cupcakes, pancakes, muffins to waffles this dispenser is primed to provide just the right amount of batter, without making a mess. Typically I’d have drips all over the pan that burn and get stuck to the pan but not this time! It was so easy to fill the cupcake liners evenly and without any mess at all! Its so easy to use and clean as well! I’ve used this to make perfect little silver dollar pancakes for the boys too and just love this KPKitchen Pancake Batter Dispenser. What i’m trying next, because the batter streams out easily, I’m going to put my skills to the test with some fun pancake art!
- For the Vanilla Cupcakes:
- 1 2/3 cups all purpose flour
- 1 cup sugar
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 1/2 sticks unsalted butter, room temp
- 3 egg whites
- 1 Tbsp plus 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup milk
- For the Vanilla Buttercream:
- 2 1/2 sticks butter, room temp
- 3 cups powdered sugar
- 2 tsp vanilla
- 1/4 cup heavy whipping cream
- Preheat your oven to 350 degrees.
- In a large bowl, mix together the butter and sugar with a hand mixer until smooth and creamy.
- Add in the vanilla and egg whites and again mix until light, fluffy and well combined.
- In a small bowl mix together the flour, baking soda, baking powder and salt.
- Add half of the dry ingredients into the butter mixture and mix until mostly combined.
- Add the sour cream and milk to the mixture, until mostly combined.
- Go ahead and add in the remaining dry ingredients and mix again until mostly combined. Using a spoon, gently stir until well combined.
- Fill the cupcake liners most of the way up {they only rise a little bit}.
- Bake for approximately 20-22 minutes, until a toothpick comes out clean. Allow to cool completely.
- For the buttercream, in a large bowl add the butter, powdered sugar, vanilla and whipping cream. Whip with a hand mixer until light and fluffy {will take about 5-6 minutes depending on the strength of your mixer}.
- Decorate the cupcakes using a piping bag with your favorite tip. I decorated with some non pareil sprinkles.

Wow! These were incredible. I made them for my grandson’s birthday and everyone absolutely love them. They were light and fluffy and the buttercream was so good. I rarely take the time for comments but these were next level.
