Summer fruit is the best!!! While I can’t pick my own just yet, it is nearing and even the fruit at the store is better. Peaches are one of my very favorites and I really do look forward to them every year. I went all out peach crazy today with a these two recipes, simple Peach Smoothie & Peach Drop Biscuits. 

My kids are little foodies and I love it! I like to have a good afternoon snack with them and what better then a smoothie with fresh peaches, banana and yogurt? Oh yes and of course you need something to go along with that delicious smoothie… like these simple peach drop biscuits.

We all know I have an obsession with baking sweet and savory scones {see: Strawberry Lime Scones , see: Pecorino, Garlic & Herb Scones… just to name a few}, well I played with that recipe just slightly to get these drop biscuits. They are slightly sweet, a great crisp exterior but soft and tender on the inside. Nice pieces of fresh peaches throughout, yea these are pretty fantastic!

Peach Smoothie & Peach Drop Biscuits

Ingredients
  • Peach Smoothie:
  • 1 ripe peach, peeled & diced
  • 1/2 cup organic low fat vanilla yogurt
  • 1/2 a ripe banana
  • 1/4 cup water
  • Peach Drop Biscuits:
  • 2 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 stick cold butter, small dice
  • 1/2 cup buttermilk
  • 1 egg
  • 3 peaches, peeled & finely diced
Instructions
  1. Preheat your oven to 350 degrees.
  2. In a food processor mix together the flour, sugar, salt and baking powder.
  3. Add in the butter and pulse until the butter is mixed and the size of peas.
  4. Add the dry mixture to a bowl. Stir in the peaches to coat.
  5. Whisk the egg into the buttermilk then add to the dry mixture. Stir until just incorporated.
  6. Using a small or medium cookie scoop, spoon the biscuits onto a lined baking sheet about 1.5 inches apart.
  7. Bake for approx. 26 minutes, until lightly golden.
  8. For the smoothie, pop all the ingredients into a blender and blend until smooth. You can add a few ice cubes if you’d like it extra cold.

  5. I have not heard of RestaurantWare, so, this is a very helpful post. I am always looking for great props to use in my posts. The recipe is awesome too. It looks very easy to make.
