I love being able to use in season fruits and vegetables because lets be honest- everything just tastes better. This Summer Nectarine Crisp is such a perfect dessert. Serve warm with a big scoop of ice cream. 

This one may look familiar to anyone who has been following along from the start. I posted this one last summer and sort of forgot about it, then it popped up as getting tons of hits on Foodista. Seeing as the local farms are currently picking peaches and nectarines I wanted to repost this wonderful summer dessert! You can use this same method for apple, peach, or mixed fruit crisps. Finish this Summer Nectarine Crisp off with a scoop of ice cream and enjoy!
Nectarine Crisp
6 ripe nectarines, large dice
2 tsp sugar
1/2 cup plus 2 Tbsp flour, divided
squeeze of lemon juice
3/4 cup quick cooking oats
1/2 cup brown sugar
1/2 cup honey granola (or whatever granola you love)
1 stick plus 2 Tbsp butter, softened
2 tsp cinnamon
Oven at 350 degrees.
Toss together the diced nectarines, regular sugar, 2 Tbsp flour and a squeeze of lemon juice in a bowl.
Place the mixture into a baking dish.
Now for the crisp topping. In a bowl mix together the oats, brown sugar, granola, 1/2 cup flour, and cinnamon. Add the mixture to a food processor along with the butter. Give it just a few very quick pulses to start to work the butter into the mixture then finish working it in with your hands or the back of a spoon.
Pour the crisp over the peaches and bake for approx 25-30 minutes, until bubbling and the top is golden.
