There is something so incredibly comforting about soup, especially Chicken Noodle Soup! There is nothing I want more on a cold day then a blanket and a bowl or two of this soup! The flavors and ingredients are simple but it is a damn good bowl of homemade soup!
I make soup very often. I grew up eating it often and I just find it so comforting and versatile. Really when it comes to soup be creative and play with the protein, veggies, grain or pasta. Chicken Noodle Soup is one of my favorites!! Its super simple to make, there is nothing complicated or fancy about it but it is all you need to warm you on a cold night or if you’re fighting off a cold.

I will say, especially with a simple soup like this, a homemade chicken broth is really going to make a difference! You can grab my Slow Cooker Chicken Broth Recipe HERE, make a batch, use some and freeze some! I always have some homemade broth in the freezer! Basically any time I roast a chicken or buy a rotisserie chicken, I go ahead and make broth.
Chicken Noodle Soup

Ingredients
- 12 cups chicken broth
- 4 large carrot, medium rounds
- 6 celery stalks, medium dice
- 1/2 small onion, small dice
- 2 cooked chicken breasts from a rotisserie chicken, rough chop
- salt & pepper
- parsley
- grated cheese
- a bag of egg noodles
Instructions
- Add the broth, carrot, celery, onion and chicken to a large pot. I also added the skin from the breast meat into the pot for flavor, just pull out before serving. Season with salt and pepper.
- Simmer for 1- 1 1/2 hours. Season with salt and pepper again if needed.
- Cook the egg noodles according to the package. Add them in just before serving. {over cooked noodles are no fun}
- Garnish with fresh chopped parsley and grated cheese.
