Happy New Year friends!!! Wishing you all a wonderful, healthy 2015!!! I don’t know about you but we have one more family New Year celebration before we get back to the daily routine. I was asked to bring a vegetable, so I made my simple and delicious Cauliflower Oreganata. I also volunteered for dessert because I’ve been dying to make a peanut butter pie! This No Bake Peanut Butter Pie is so easy to make, its rich, creamy and crazy delicious!!! 

I love an easy dessert recipe that not only looks gorgeous but tastes fantastic! This one couldn’t be much easier plus theres the bonus of not having to turn on the oven. I did make a homemade crust simply because I had everything on hand already but you can just use a store bought graham cracker crust and you’ll be set! Want to get even crazier, you can go for one of the chocolate cookie crusts, whatever your preference! In the directions I’ll go over how I made my crust in case you’d like to make your own also.

The filling is oh so easy with just 5 ingredients! I used a Greek yogurt cream cheese, peanut butter, powdered sugar, vanilla extract and whipping cream. The cream is whipped until soft peaks are formed. The cream cheese, peanut butter, powdered sugar and vanilla are blended until smooth and creamy. At that point you just blend the two together and place it into the pie crust, refrigerate overnight or for a few hours. I shaved some chocolate {which happened to be in the form of a chocolate Easter bunny} over top to fancy it up a bit and thats it!

Ingredients
  • 8 oz graham crackers
  • 1 stick unsalted butter, melted
  • {1 store bought graham cracker pie crust- if not making your own}
  • 8 oz Greek yogurt cream cheese
  • 1 cup natural peanut butter
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 pint heavy whipping cream
  • chocolate to shave on top
Instructions
  1. Preheat your oven to 350 degrees {only if you are making your own crust}.
  2. Place the graham crackers in a food processor and blend until fine crumbs.
  3. Melt the butter then stir together with the graham cracker crumbs.
  4. Press the graham crackers into a pie dish or a spring form pan {this is what I used because its just easier to slice and serve}.
  5. Bake for 10 minutes, Cool completely.
  6. In a bowl, add the peanut butter, cream cheese, vanilla and powdered sugar. Blend with a hand mixer until smooth and creamy.
  7. In a large bowl, add the whipping cream and blend with a hand mixer until thickened enough to form soft peaks.
  8. Add the whipped cream to the peanut butter mixture and blend until combined, smooth and creamy.
  9. Place the filling mixture into the cooled pie crust and refrigerate overnight or for a few hours.
  10. Using a peeler, shave some chocolate over the pie. Serve cold.
