Strawberry Lime Scones

Strawberry Lime Scones | LeMoine Family Kitchen . These scones are perfect for breakfast, brunch or dessert and really easy to make!

 

The other day I realized I hadn’t baked a scone since Mothers Day and decided its been too long! I had a lot of ripe strawberries on hand so figured what better way to use them then to make a delicious scone. Being that warmer weather is here I also wanted to throw in a little brightness and went with fresh lime. These Strawberry Lime Scones are pretty darn fabulous and perfect for summer!

These scones are packed with fresh diced strawberries and lime zest. To add a little more lime flavor I made a simple glaze of lime juice and powdered sugar. When the scones come out of the oven, I brushed them with the lime glaze and wow, what great brightness it brings.

I think I am starting to be known with the family as scone obsessed and I am ok with that! I love making a whole bunch of batches at a time, keeping some out to enjoy over a few days then freezing the rest. Scones freeze GREAT! Craving one or friends stopping by, you can grab a good variety, pop them in the oven to warm up and they are just like fresh baked. The day I made these I also made a batch with fresh peaches and a batch with chocolate and white chocolate chips. My freezer is now well stocked again and I am a happy camper.

Strawberry Lime Scones

Ingredients
  • For the scones:
  • 2 cups flour
  • ¼ cup sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1/2 cup buttermilk
  • 1 egg
  • 6 Tbsp cold butter, small dice
  • 1 cup finely diced strawberries
  • zest of 3 limes
  • 1-2 Tbsp melted butter
  • For the glaze:
  • juice of 2 limes
  • 3-4 Tbsp powdered sugar
Instructions
  1. Preheat your oven to 400 degrees.
  2. Add the flour, sugar, baking powder and salt to a food processor fit with the dough blade.
  3. Add in the cold butter and continue to mix until the butter becomes incorporated and the pieces are about the size of peas.
  4. Add the dry mixture to a bowl. Stir in the strawberries and lime zest.
  5. In a measuring cup mix together the buttermilk and egg. Pour into the dry ingredients and stir with a spoon until the dry ingredients are mostly incorporated.You do not want to overwork the dough.
  6. Pour the dough out onto a very lightly floured surface {too much flour will leave you with a heavy dense scone}. Gently press together to form into a square or rectangle about 1 inch high.
  7. Cut into 6-8 even squares or rectangles. Place onto a lined baking sheet and brush with the melted butter.
  8. Bake for approx 22-24 minutes or until lightly golden.
  9. While baking, make the glaze by simply stirring together the lime juice and powdered sugar.
  10. Once you remove the scones from the oven, brush all the glaze onto the scones. The hot scones will absorb the glaze.
