Peach Caprese Salad

Peach Caprese Salad | LeMoine Family Kitchen. Peaches, prosciutto, fresh mozzarella, basil and a balsamic drizzle. Great as a side dish or a light meal. This is Summer perfection.

 

Simplicity at its best- fresh ingredients and incredible flavors. we really are so lucky to have some amazing specialty stores and small local farms where we can find some great seasonal and homemade items. This Peach Caprese Salad is a perfect summer treat! This salad is what Summer is all about; simple and fresh.

This is a really fun twist on a traditional Caprese Salad where its typically sliced tomatoes and mozzarella. Local sweet peaches, salty prosciutto, creamy freshly made mozzarella on top a bed of arugula. To finish it all off, some fresh basil and a balsamic drizzle. The flavors work so incredibly well together and has easily become one of my favorite salads to make.

Peach Caprese Salad

Ingredients
  • fresh mozzarella, sliced
  • peaches, sliced
  • prosciutto, thinly sliced
  • arugula
  • basil
  • balsamic glaze {I used store bought but you can make your own}
  • salt & pepper
Instructions
  1. Lay a bed of arugula on the plate.
  2. Platter the fresh mozzarella, prosciutto and peaches how you’d like.
  3. Top the salad with some sliced basil and a little bit of balsamic glaze drizzle.
  4. Season lightly with salt and pepper.
