Vegetable Cream Cheese

Vegetable Cream Cheese |LeMoine Family Kitchen

 

Usually once a week we do bagels for breakfast. I am a big fan of everything bagels with Vegetable Cream Cheese and now my boys are starting to love it too. While I may not have attempted making my own bagels just yet, I can certainly manage homemade Vegetable Cream Cheese because, well, its going to be super fresh always. This is so simple to make and great to have on hand.

4 ingredients plus a little salt and pepper and thats all! Remember those odd looking carrots I grew? You can check those crazy carrots out is my Summer Squash & Kale Soup Recipe. Anyhow, I made use of those carrots here along with chives and green bell peppers… all from my garden and it definitely doesn’t get any fresher then that. A little salt and pepper and you are good to go!

Vegetable Cream Cheese

Ingredients
  • 8 oz cream cheese {I used light cream cheese}
  • 1/4 cup finely minced carrots in a food processor
  • 3 heaping Tbsp finely snipped chives
  • 1/4 cup finely diced green bell peppers
  • salt & pepper
Instructions
  1. Place the finely minced carrots onto a clean dish towel and squeeze out any excess liquid.
  2. Place the cream cheese, carrots, chives, green bell peppers, salt and pepper in a bowl. Stir until well combined.
