Last nights dinner was pretty delicious friends! I’ve been working on using up things that we have on hand between the fridge, freezer and pantry. With just a handful of ingredients, this Tortellini in a Tomato Cream Sauce with Peas & Prosciutto is an elegant yet simple weeknight meal. 5 cheese tortellini tossed in an easy tomato cream sauce, some frozen peas and topped with crisp prosciutto… this is what I call Italian comfort!
There are certain things that I always have on hand including a variety of pasta {both dry & frozen}, frozen peas and cans of San Marzano tomatoes. Pasta in general is a go to when I need something quick for dinner. There are so many different dishes you can make with pasta that really how could you get tired of it?! I happened to run to my favorite Italian specialty store yesterday morning with one of my bests, Natalie, and of course had to go and grab some Prosciutto de Parma! Sure, prosciutto is a little bit on an expensive ingredient but you don’t need much here and the rest of this dish is basic. I definitely believe in quality when it comes to certain things and prosciutto is one of them {and yes I totally snacked on that beautifully crispiness while cooking haha} .
NOTE: this is a large recipe but you can easily have it if you aren’t cooking for 7 people like I typically am. But hey, leftovers are always great to have too! I do hope you all enjoy this pasta dish as much as my family did.
- 1 yellow onion, small dice
- 6 cloves garlic, rough chop
- 1 Tbsp dried oregano
- 10 slices prosciutto
- 3 cans peeled San Marzano tomatoes, pureed
- 2 cups frozen peas
- 2 cups light cream
- 3 lbs cheese tortellini
- olive oil

- Stack a few slices of the prosciutto together at a time. Roll the slices up and cut thin slices from there. Using your hand separate the pieces up a bit after cutting.
- Heat a large pot, over medium low heat, and add in about 1/4 cup of olive oil. Add the prosciutto and brown until crisp. Remove the prosciutto with a slotted spoon and place aside.
- To the oil go ahead and add the onion, garlic, oregano and a little salt and pepper. Cook until softened.
- Add in the pureed tomatoes and simmer, stirring occasionally, for about 30-45 minutes.
- Lower the heat at the end of the cooking time and stir in the light cream and peas. Cook for a few minutes, until the peas are warmed through. Cover.
- Cook the tortellini to al dente according to package. Drain and toss with the sauce. Serve the crisp prosciutto over top.
