This Cajun Grilled Chicken with Summer Corn Salad is my kind of Summer dish. Its simple, full of incredible colors, flavors and healthy. When weather permits, grilling is my go to option for dinner because honestly, who wants to be stuck inside a hot kitchen? This recipe is really easy to throw together and packs the perfect amount of spice that is perfectly balanced with the cool refreshing salad.

I love cajun seasoning for grilled chicken. Cajun season typically is a blend of garlic powder, black pepper, paprika, onion powder, cayenne pepper, thyme, oregano and red pepper flakes. It does carry some good heat which is why I paired it with this gorgeous summer corn salad. A mixture of corn, bell peppers, red onion, avocado, scallion, lime juice, cilantro, salt and pepper. Its simple but so refreshing!

Cajun Grilled Chicken with Summer Corn Salad

Ingredients
  • 8-10 thinly sliced chicken breasts
  • cajun seasoning
  • 2 ears of corn, boiled or grilled, kernels cut off
  • 1 red bell pepper, grilled and diced
  • 1 orange bell pepper, grilled and diced
  • 1 yellow bell pepper. grilled and diced
  • 2 avocado, small dice
  • 1/4 cup thinly sliced scallions
  • 1/4 cup finely diced red onion
  • cilantro
  • juice of 2 limes {plus lime wedges for garnish}
  • olive oil
  • salt & pepper
Instructions
  1. Season the chicken with a dusting of cajun seasoning on all sides. Grill on a hot grill for about 4 minutes per side {timing will depend on the thickness of the chicken}.
  2. Grill the corn {or boil} and the bell peppers until slightly charred on each side.
  3. Cut the kernels off the corn, toss with the diced bell peppers, avocado, red onion, scallion and a good handful of cilantro leaves.
  4. Squeeze the lime juice over top with about 1-2 Tbsp of olive oil. Season with salt and pepper to taste.
  5. Top the chicken with the corn salad and serve some lime wedges along side.
