It has been a long winter and I am ready to get back outside, enjoying the warm temperatures, longer days and grilling delicious food! We have finally gotten a taste of that warmer weather so I had to get out there and make my Mango Jalapeño Ribs with Red Cabbage Slaw. Grilling tender, flavorful ribs is so easy and I am thrilled to share this recipe with you!
I don’t know about you all but we have had such a brutal winter! I am so happy that we are finally moving into the warmer weather and sunny days after so many cloudy days and a crazy amount of Nor Easters! I am back in grilling mode and LOVING it! My Mango Jalapeño Ribs with Red Cabbage Slaw are so fantastic and easy to make thanks to Smithfield Extra Tender Pork Back Ribs. These are fall off the bone, finger licking delicious!
I have shared some really incredible recipes using Smithfield® pork like my Pork Tacos with Sweet & Spicy Peach Salsa and my Grilled Pork with Pineapple Fried Rice. Next up had to be their incredible ribs! Lets be honest- just about every time I head to my local Walmart, I grab a Smithfield® roast, tenderloin or rack of ribs for dinner because the selection is always great at Walmart! Smithfield Ribs are hand-trimmed, extra-tender and juicy and have no added hormones or steroids. These ribs make it so no matter the level of experience you have in the kitchen or at the grill, their pork is sure to impress.
When coming up with new recipes I like to use ingredients that are in season when I can and create a nice balance of flavors. With warmer weather I love the idea of a sweet & spicy BBQ sauce and this Mango Jalapeño BBQ sauce is so easy and so tasty on these ribs! The base is simple- your favorite “original” flavored bbq sauce, fresh mango, jalapeño, cilantro and salt.
Smithfield Fresh Pork is perfect any night on the grill, whether a great weeknight meal or getting together to barbecue with family and friends. I know that grilling ribs might sound like its a tricky thing to do but let me tell you, its really really easy to make these incredibly delicious Mango Jalapeño Ribs with Red Cabbage Slaw because my secret weapon is Smithfield Extra Tender Pork Back Ribs.
The trick to fall off the bone ribs- indirect heat! You basically don’t want the ribs right over the flame of the grill. You want them to cook long enough to break down and become super tender. I simply turned on just the outside flames and left the two in the center of my grill off. This is where I allowed the ribs to slow cook to perfection. The meat is so juicy and you get that amazing crust on the outside of the rib which is my favorite part!
Another quick tip when grilling ribs or anything for that matter where you are using a BBQ sauce… you do not want to apply the sauce until the last bit of cooking. The sugars in the BBQ sauce will burn and no one wants that. I simply season the ribs with a little salt, pepper and garlic powder before grilling. Then in that last 30 minutes of cooking a slather on the Mango Jalapeño BBQ sauce on a couple times.
- 2 racks of Smithfield Extra Tender Pork Back Ribs
- 1/2 cup bbq sauce
- 1 mango, peel removed, diced
- 1 jalapeno, seeds removed for less heat if desired
- a palmful of cilantro leaves
- For the Slaw:
- 1/2 a small head of red cabbage, thinly shredded
- a couple handfuls of shredded carrot
- 2 tsp sugar
- 1 Tbsp olive oil
- juice of 1 lime
- 1 tsp salt
- 1/2 tsp garlic powder
- pepper to taste
- fresh chopped cilantro to taste
- Preheat your grill allowing enough room for the ribs to cook with indirect heat- not directly over a flame.
- Season the ribs lightly with salt, pepper and garlic powder. Place on the grill in a spot that doesn’t have the flame on. Cook for 1 1/2 – 2 hours rotating the racks every 30 minutes or so, so that the same edge is not always closest to the flame.
- To make the bbq sauce- place the bbq sauce, diced mango, jalapeño and cilantro into a blender. Blend until smooth. Salt to taste.
- In the last 30 minutes of cooking you will go ahead and brush the ribs with the mango jalapeño bbq sauce 2-3 times.
- For the slaw mix together the sugar, olive oil, lime juice, salt, pepper and garlic powder in a bowl. Toss the shredded cabbage and carrots in to coat. Refrigerate.
- Serve the ribs with extra of that delicious mango jalapeño bbq sauce, the red cabbage slaw and some fresh baked cornbread {shhh…. I totally use a boxed mix for that!}.
