A while back I made Game Day Sliders that my family went wild for so keeping with that idea I came up with this fun and easy Cheeseburger Tater Tot Casserole! Perfectly seasoned organic ground beef topped with cheese, topped with tater tots, topped with cheese! This one is a winner!

The last few weeks have been crazy around here!! Travel hockey for our oldest, being class mom for both boys and just everything in between. I have been really scrambling to get a home cooked dinner on the table some nights. The other night I wanted something that all four of us would eat, something that was easy and fast. This Cheeseburger Tater Tot Casserole hit it on the head! I’ve always got a few packages of Claytons Organic Ground Beef in my freezer which alway makes for a delicious easy meal!

You may very well have this casseroles ingredients on hand already- nothing fancy here. I start by sautéing onion and garlic until softened. Add in the ground beef, breaking it up with a masher as it cooks. Stir is a super tasty sauce and chopped pickles… can I tell you, the flavors are definitely going to remind you of a certain fast food joint without all the fake stuff!
I poured the beef into the casserole dish, topped with some shredded cheddar then layered on frozen tater tots. As my little guys said while devouring this… “its like the tater tots are the bun”. There is something so nostalgic about tater tots isn’t there? Once the whole thing is layered with tater tots I add more shredded cheddar then pop into the oven for 25- 30 minutes. After its done cooking I pour the remaining amaz-sauce and more chopped pickles on top! So good!!
I can’t emphasize enough what a difference it makes when you start with high quality meat like Claytons Organic. - 2 Tbsp olive oil
- 2 garlic cloves, rough chop
- ½ small onion {about 1/2 cup small dice}
- 1 lb Claytons Organic ground beef
- 1/2 cup ketchup
- 2 Tbsp light brown sugar
- 2 Tbsp yellow mustard
- 1 tsp Worcestershire sauce
- 2 Tbsp water
- about 1/2 cup chopped pickles {plus extra for on top}
- frozen tater tots
- shredded cheddar
- Preheat oven to 425 degrees.
- In a skillet, add the olive oil, garlic and onion. Cook until softened.
- In a small bowl whisk together the ketchup, brown sugar, mustard, Worcestershire sauce and water.
- Add in the beef, breaking up the meat as it cooks. Once cooked most of the way through stir in 3/4 of the sauce and chopped pickles. Cook a couple minutes to thicken up.
- Add the meat to an 8×8 casserole dish. Sprinkle on a thin layer of shredded cheddar. Layer on the tater tots and another layer of cheddar.
- Bake for 25-30 minutes. Top with remaining sauce and some extra chopped pickles.
