There are certain recipes I come across that almost immediately bring back memories from childhood and these White Cheddar Broccoli Stuffed Baked Potatoes did exactly that! I haven’t had a stuffed potato in years and can I tell you- these are WAY better then any I’ve had. Simple to make, can really be an entire meal in and of itself or a great side dish. Absolutely delicious!

How drool worthy are these White Cheddar Broccoli Stuffed Baked Potatoes?!?!  Today is our Freaky Friday Fall Edition Recipe Swap and I am so excited to share this recipe with you! A bunch of my fabulously talented blogger friends and I get assigned a blog to choose a recipe from then create and share with our readers. We don’t find out who we’ve been assigned until today! Me, I was assigned the incredibly talented, Brandi from Aunt Bee’s Recipes.

Michaela from An Affair From The Heart is so amazing for organizing this whole event and I am so appreciative to be a part of it. When she told me I was assigned Brandi of Aunt Bee’s Recipes I did a little happy dance.   I absolutely LOVE her blog and all her amazing recipes that she shares! In my opinion, Aunt Bee is the Queen of comforting casseroles! You’ve got to head over to check out her Chicken, Bacon Ranch Hash Brown Casserole, Meatball Sub Casserole and her Tamale Pie! White Cheddar Broccoli Stuffed Baked Potatoes

So what drew me to these White Cheddar Broccoli Stuffed Baked Potatoes besides that they are super nostalgic to me? The simplicity is a huge part and I knew my family was going to LOVE them!! Also they are easily portable to hockey practice- because these days we live at the rink 6 days a week and I need simple! These potatoes are properly baked in the oven {because lets be honest, a microwaved potato just doesn’t taste the same at all} seasoned with olive oil, salt and pepper.

White Cheddar Broccoli Stuffed Baked Potatoes

Four nice sized russet potatoes get placed onto a baking sheet, seasoned and baked at 400 degrees for about an hour until fork tender. The skin gets that incredible flavor that only comes from oven baking potatoes and the inside is light and fluffy. While the potatoes are baking you can make the super easy, cheesy, delicious white cheddar broccoli and bacon sauce! HEAVEN!!

The sauce starts with a simple roux- butter and flour. Stir in milk and once thickened add in shredded sharp white cheddar, cooked broccoli and crisp bacon. It comes together super quick and easily and the taste is amazing! Creamy, salty goodness- and really what better combo then broccoli and cheese?!

Carefully cut into the potatoes and squeeze the ends to open them up. Top each potato with a good helping of the white cheddar broccoli bacon sauce. To finish sprinkle a little extra cheese and bacon on top. Pop back in the oven until golden.

White Cheddar Broccoli Stuffed Baked Potatoes

Ingredients
  • 4 medium-large russet potatoes
  • olive oil
  • 1/2 stick unsalted butter
  • 1/4 cup flour
  • 1 1/4 cup 2% milk
  • 2 cups, shredded sharp white Cheddar (plus more for topping)
  • 2 heads broccoli, florets, boiled for 4 minutes in salted water
  • 12 oz bacon, rough chop, cooked until crisp
  • salt & pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Place potatoes onto a baking sheet. Pierce with a fork, drizzle with olive oil and season with salt and pepper. Place into preheated oven and bake for about 1 hour.
  3. While they are baking prepare the sauce. In a saucepan make a roux by combining the butter and flour over medium heat.
  4. Whisk in the milk. Stir in about 2 cups cheese and stir until melted. Once combined smoothly, remove from heat and fold in the cooked broccoli florets, crispy bacon bits {save some for topping}
  5. and season with salt and pepper to taste.
  6. When the potatoes are done make a cut across the top and squeeze it from the bottom so a small pouch opens up.
  7. Spoon the filling into the potato, sprinkle with cheese and bacon then pop in the oven for a few more minutes until golden brown and bubbly.

    Those potatoes are definitely a meal and look absolutely delicious. I have a friend with hockey boys and can’t believe you have time to cook let alone turn out beautiful dishes like this one! I can’t wait to give this one a try!

    These were so good. I cant believe how easy they were and how much popping them back in the oven to turn the sauce a nice golden brown semi crunchy top did for them! I made a few extra thinking Id have them for lunch…. but so many people wanted seconds there wasn’t any left! Definitely making these again… next time maybe a double batch!
