Good morning friends!!! This morning I opened the fridge and realized we’re pretty low on everything and with the freezing icy rain happening outside, I am in no mood to venture out. Thankfully our freezer is not as empty but still, what to make with what we have? Yup, I was drawing a blank so I started peeking through the archives right here to give me some ideas. I sometimes forget what I’ve made and how much I loved some of those dishes! I decided to put together a roundup of 15+ Easy Chicken Recipes that are on the top of my list! Hope you give some of these a try and enjoy them as much as I do! 

First up, my BBQ Chicken Pizza!

This one is so easy to make and the flavors are pretty awesome!!! I absolutely love the combo of the sweet and smoky BBQ sauce with the sweetness of the pineapple. Finished off with fresh cilantro…winner!!!

Cajun Chicken over Rice

This was my first attempt at a cajun inspired dish and I was thrilled with the results! Chicken, peppers and onions in a cajun cream sauce. So good!

Roasted Chicken Thighs with Potatoes, Peppers and Onions

Chicken thighs are a great budget friendly piece of meat and it doesn’t dry out nearly as easily as a chicken breast. A little prep to cut the veggies then onto a baking sheet or baking dish and roasted to juicy, golden perfection. Simple salad on the side to complete the meal!

Chicken, Broccoli & Cheddar Bake

Chicken, broccoli and cheddar is a pretty popular combination and for good reason; its delicious!!! This one is a great weeknight meal! Tender chicken and broccoli in a homemade cheddar sauce tossed with rice and baked until bubbly and golden.

Sautéed Chicken with Spinach and Roasted Peppers

This one came about as one of those, lets see what we have left in the fridge and throw something together. Such a simple recipe but the flavors just work! Lightly coated chicken, baby spinach and roasted peppers in a quick broth based sauce.

Slow Cooker Chicken Tikka Masala

Indian food is not something i’m very familiar with but when I came across a remeasured package of seasoning for Chicken Tikka Masala I figured lets give it a try! Its super easy with the use of a slow cooker and I really loved this dish!!! Its a great first Indian dish because the flavors are pretty mellow.

Salsa Chicken and Black Beans

This one could not be easier!!! Some shredded chicken I cooked in the slow cooker then tossed with salsa, fresh lime juice and cilantro! Yup, perfect weeknight meal!! Will take you no time to put together and no doubt it’ll become a go to meal! Don’t skip the beans here, they are phenomenal!!!

Sweet & Sour Chicken

I LOVE this dish!!! Tender chicken, peppers, onions and pineapple tossed in an easy sweet & sour sauce. This one is a must!!!!

Balsamic Chicken Salad

So so simple, a great healthy lunch! Grilled chicken tossed with balsamic vinegar, red onion, roasted peppers, fresh parsley, salt and pepper. Serve over some mixed greens and you’re set.

Quick and Easy Garlic & Herb Grilled Chicken Marinade

A great basic chicken marinade. This is one of my highest views recipe and its so simple but great flavor! Summer is coming and this needs to be on your try list! Tons of fresh herbs, lemon juice and olive oil… no boring grilled chicken here!

Bacon Wrapped BBQ Chicken

3 ingredients, thats it! Chicken breasts, turkey {or regular if you prefer} and your favorite BBQ sauce. Baked in the oven until that bacon is golden and crisp! These make for a great party appetizer too, just dice the chicken rather then the large strips I do here.

Chicken & Veggie Meatloaf Muffins

I love this recipe!!! Its easy to make, sneaks in some veggies and its delicious! This one has been featured on Foodista and Daily Buzz Food. Serve as is or top with some tomato sauce, either way they are delicious and kid approved!!

Bruschetta Chicken

This chicken dish is fantastic! Lightly floured and sautéed. Tossed with fresh tomatoes, garlic, basil and a little olive oil then baked in the oven. Serve over pasta or with a side salad.

Braised Chicken with Artichoke Hearts & Olives

I love a good rustic Italian dish! This is all put together in just one sauté pan. Bone in skin on chicken breasts, artichoke hearts, olives in a white wine, lemon and broth sauce. Absolutely delicious!

Lemon White Wine Chicken over Linguini

Are you seeing a trend? I love lemon! This is another wonderful one pan dish! Lightly sautéed thin sliced chicken breasts in a simple sauce of shallots, white wine, lemon, broth and fresh parsley. Served over linguini and finished off with grated pecorino!

Cornmeal Crusted Chicken with Kale Pesto

This is a great twist on a traditional breadcrumb coated cutlet. I used cornmeal to coat and I love it! It adds a slightly nutty flavor and topped with a simple kale pesto, its amazing {and kale is a great superfood}!!!

Grilled Chicken with Creamy Lemon, Tomato & Basil Sauce

Yes, more lemon!!! This sauce is pretty kick a**! Its so incredibly simple but the flavors of the fresh tomato, basil, lemon and light cream over top a piece of grilled chicken! A favorite of mine!!!

Prosciutto Wrapped Rosemary Chicken

A handful of ingredients make for this delicious chicken dish! The combination of the earthy rosemary and salty prosciutto is fantastic!!!!

Tuscan Roast Chicken

Another great rustic Italian dish! Chicken thighs, peppers, onions, olives, lemon and lots of fresh rosemary. Its so easy too, just throw all the ingredients into a baking dish and pop into the oven!

Baked Chicken Stuffed with Sun Dried Tomato & Mozzarella

I love making different pestos and sun dried tomatoes is one of my favorites. Stuffed in a chicken breast along with fresh mozzarella, YUM! This is simple and delicious!

    I can vouch for the Chicken Meatloaf with veggies…it’s amazing and even my “meat and potatoes” brother-in-law was won over.

    I’m always on the look out for a less time consuming way to make tikka masala so your slow cooker recipe is on my next menu.
