Classic Poutine {Fries, Gravy & Cheese Curds}

Sometimes it is the simplicity of a dish that makes it so incredible and that is exactly the case for this one, Classic Poutine {Fries, Gravy & Cheese Curds}! A couple of weeks back I told you that I was desperate to get my hands on some cheese curds and how I knew the only way would be to order and have them sent from Wisconsin. That I did, I ordered 5 lbs of these squeaky bites of deliciousness! It all started with this dish right here, Poutine! My husband had been asking for me to make it and I wanted to do it the classic Quebec way so cheese curds were a must. That is just one component though; equally as important is a fabulous homemade gravy and fresh hand cut french fries! This dish was such a treat!

The first dish I made with my delivery of curds was this Beer Battered Cheese Curds with Spicy Dipping Sauce! The Classic Poutine right here, this one brought the family together! We were all excited for this one! Really though, whats not to love am I right?!?! Crispy homemade fries topped off with curds all in a steaming hot bath of gravy! I used the double fry method for the fries, they come out incredible every time! Cooking the fries this way does take a little time but it is really worth it! The gravy comes together easily and can be made a day or two ahead of time to make life that much easier! Bring Quebec to your home with this Classic Poutine!

NOTE: The cut potatoes should sit in a bowl of cold water for 2-3 hours or overnight. This will help pull out some of the starch and help them to crisp up. Also, Be sure to read through the entire recipe so you understand the frying steps.
