This Roasted Lemon Oregano Chicken is a really simple recipe but the flavor is really wonderful. A truly delicious weeknight meal. Bone in skin on chicken breasts are marinated in olive oil, lemon zest, lemon juice, oregano, salt and pepper then roasted until golden and perfectly juicy.

I love the freshness of the lemon and oregano and that perfectly crisp skin is SO GOOD! I am sort of obsessed with lemons. Whether its a wedge in my water, in my Lemon Asparagus Risotto, or my Meyer Lemon Blueberry Cheesecake I really love lemon! To me, lemon and chicken pair perfectly together. Not only do I marinade the chicken with some fresh lemon juice but I also squeeze fresh lemon on after its cooked to add a little more brightness to it.
When it comes to roasting chicken breasts I just about ALWAYS go for the bone in and skin one split breasts. They will end up a whole lot juicer and more flavorful then a boneless skinless breast. I won’t lie, I cant resist that crisp skin. I served the chicken over steamed rice and a Caesar Salad on the side. You can also use this same recipe then use the chicken for a basic chicken salad sandwich or in a big pot of chicken noodle soup.
- 2 bone in skin on chicken breast
- zest and juice of 1 lemon {plus additional for garnish}
- 2 tsp dried oregano
- 1/4 cup olive oil
- 2 tsp salt
- black pepper
- Place all the ingredients into a food storage bag. Mix around to coat the chicken well. Marinade in the refrigerator for 45 minutes to an hour. NOTE: The acid in lemon will begin to cook the chicken if you marinade for too long.
- Preheat your oven to 350 degrees.
- Place the chicken breasts on a lined baking sheet and roast for about 45 minutes or until the juices run clear and the skin is crisp. The internal temp of white meat chicken should reach 160 degrees.
- Squeeze fresh lemon juice over top and garnish with fresh chopped parsley. Serve over steamed rice.
