I don’t even know where to start with these Easy White Pizza Tarts they are THAT GOOD! The base of these tarts- buttery delicious puff pastry, topped with an amazing seasoned olive oil and topped with ricotta, baby spinach and mozzarella. These are squares of perfection and definitely should be on your must try list.
Happy Friday my friends! How drool worthy are these Easy White Pizza Tarts?!?! I have a confession- not my recipe because today is our Freaky Friday Summer Edition Recipe Swap! A bunch of my fabulously talented blogger friends and I get assigned a blog to choose a recipe from then create and share with our readers. We don’t find out who we’ve been assigned until today! Me, I was assigned the incredibly talented, beautiful soul Jennifer of Take Two Tapas.
Michaela from An Affair From The Heart is so amazing for organizing this whole event and I am so appreciative to be a part of it. When she told me I was assigned Jennifer of Take Two Tapas I couldn’t have been more thrilled! Her blog is a go to for me, especially when it comes to small plates, appetizers and the most amazing snacks! To name a few of her mouth watering recipes… Zesty Chili Lime Cashews, Muffuletta Cheese Ball and her Decadent Twix Dip. While everything looked amazing once I saw her recipe for these white pizza tarts I knew I needed to make them asap and wow am I glad I did!
We are huge fans of pizza in any form and I especially love a good white pizza! Jennifers twist here with the individual sized puff pastry squares is genius! That buttery, light and airy crust is the perfect base. She tops the squares with a mixture of olive oil, grated cheese, oregano, red pepper flakes and parsley. Im now hooked and could happily sit with that oil and a loaf of bread for dipping.
The flavor of that seasoned oil pairs so well with the pastry, ricotta, mozzarella and baby spinach! While this time around I made these just for myself and the kiddos for lunch, they are definitely going on the menu of the next get together I have! Whats not to love right?!
Puff pastry is incredible.. layers of deliciousness but you don’t want them to puff up too too much so keep them shaped you simply score the squares to create a crust area then poke with a fork in the center to keep that down. With this recipe you’ll get 18 squares {9 from each sheet in a 2 sheet pkg}. Don’t judge, I am horrible at cutting anything into even pieces haha.
To assemble- super easy- Brush the squares with the seasoned olive oil, top with ricotta, some torn up spinach and shredded mozzarella. These bake for 15 minutes in a 400 degree oven until golden perfection!
- 1 package Puff Pastry (2 sheets)
- 1/2 cup olive oil
- 3 tablespoons garlic (minced)
- 2 tablespoons grated pecorino or parmigiano cheese
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1/2 teaspoon red pepper flakes
- 1 cup mozzarella cheese (shredded)
- 1/4 cup ricotta cheese
- 1/2 cup spinach leaves, torn into small pieces
- Preheat your oven to 400 degrees.
- In a measuring cup mix together the olive oil, oregano, parsley, red pepper flakes and grated cheese.
- Carefully unfold the puff pastry sheets. Cut each sheet into 9 even{ish} squares and place on a lined baking sheet.
- Using a sharp knife, score around the edges- about a 1/4 of an inch in from the edges all around.
- Using a fork, poke the center a few times to prevent it from puffing up.
- Brush each square with the seasoned olive oil.
- Top each square with a little dollop of the ricotta, a few torn pieces of spinach and some shredded mozzarella.
- Bake for about 15 minutes, until golden.
